How are shrimp processed?

At sea, the shrimp are frozen in a cold brine or sugar-salt solution. This is done by blast freezing or flat freezing. Cooked and raw alike, whole shrimp can be frozen in a plate freezer, but cooked shrimp cannot be submerged and frozen because thawed shrimp are difficult to peel.
